I'm on the hunt for some new dinner ideas and would love to hear about your go-to recipes. What's a dish you find yourself making time and time again? Feel free to drop some cooking tips or photos if you have them!
 
I like to use hamburger some Bushes baked beans,onion,jalapeño,some sausage,maybe some Rotel tomatoes in the crockpot. I’ve also been making fried rice. The secret being make the rice and refrigerate it . Mix in some frozen carrots and peas with diced onions.Top with some Costco panko shrimp.
 
This is always a hit around Christmas when all of our rather large family comes in for the Holiday. The quantities are based on 4 people but we double/triple it for the gang. Enjoy...
Savory Christmas Eve Beef Casserole

Ingredients:

1 1/2 pounds ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, undrained
1 can (10.75 ounces) condensed cream of mushroom soup
1 cup frozen peas and carrots
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 cups cooked egg noodles
1 cup shredded cheddar cheese

Directions:
Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender. Drain any excess fat.

Stir in the diced tomatoes, cream of mushroom soup, frozen peas and carrots, thyme, salt, and pepper. Let the mixture simmer for about 5 minutes.

Add the cooked egg noodles to the beef mixture and stir until well combined.

Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Shrimp and Grits

Mix together: 4 cups chicken broth (boil)
1 cup grits (cook regular)
¾ cup cheddar cheese (grated)
1 cup Monterey Jack with Peppers (cubed)

Sauté and mix in: 2 T Butter
1 Bunch Green onions (chopped)
1 Green Pepper

Mix in: 1 lb. Shrimp (peeled and cooked) (Can use frozen!)
1 Can Rotel Tomatoes (drained)

Mix all together and put in a greased 2 qt. dish. Top with additional cheese.
Bake at 350 degrees for 30 minutes. Great with a green salad and for a brunch!
Serves 8 to 10 people.
